Food Storage 101 Class Notes

Making Food Storage orders at the Oklahoma City Cannery:

~Here is the link to the order form. You will need to fill it out (it will calculate current prices for you, which are subject to change and may have tax added on when you pick up) and then print out
Don’t forget to order your cans, lids, and oxygen absorbers for any bulk items you plan on canning. (Unsure of how many cans to order? Check out how many pounds fit into a can on your order form, then see how many pounds you are buying in bulk and do the math)

~After you print it out, finish filling out information at the top, then fax it to this number: (405) 378-0566
Fax it in the next two weeks and your order should be ready in August. This is important, since we will have the dry canner available if you need it in September or October.

~You will pay when you pick up your order.

In the bottom left corner of the order form, there is a list of items you may buy pre-canned. Which costs about the same…

Ask for the person over "Home Storage" or an Elder Snart (it is snart not smart) He is the person unless he was just released. But if you do get a live person on the phone just ask for someone over the Home Storage. They are there on Wednesday, Thursday and Saturday from 9:00am-4:00pm.


Difference Between Grains:

Hard Red Wheat—traditional strong whole wheat flavor

Hard White Wheat—Milder flavor (The bread I offered at the activity was made from half hard white wheat and half reg bread flour). Same nutritional content as hard red.

Where to store your food storage

Before you order, try to think of places in your home you can keep your food storage. I suggest starting with cleaning out your linen closet. You can also utilize top shelved in closets, above cabinets in the kitchen (not pretty, but effective), and under cribs (they are usually nice and high with plenty of storage underneath)



How to store sugar and oats

Just to give my personal opinion, I didn’t like the flavor of my oatmeal and sugar after it had been stored in the number 10 cans. I have heard that mylar bags are a tastier option. I enjoy using buckets with Gamma Lids and also large Tupperware containers. My mother in law always lets me know when Gamma lids go on sale (which seems to happen a few times a year) and I will post any deals I find out about on facebook.

Bread recipe I served at activity

Crispy French Bread

3 cups warm water

2 Tbsp sugar

2 Tbsp melted butter

2 Tbsp yeast

3 tsp salt

7- 8 1/2 cups flour *

Mix water, sugar, butter, yeast and salt. When yeast bubbles, add 3 of 7 cups of flour. Mix well. Add 2 more cups of flour and mix well. Add final amount of flour and mix well until all flour is cleaned from the sides of the bowl. Knead for 7-10 minutes. Set in greased bowl under a towel for 1 hour.

Cut into 2 pieces and roll each into a rectangle, about 1/2 inch thick and roll up lengthwise. Place loaves onto greased cookie sheet and let rise in a warm place for 15-20 minutes. Bake 25-30 minutes @ 375 degrees. Throw 2 ice cubes in the bottom of the oven for the last 10 minutes of baking time.

* start with 7 cups of flour and add 1/2 cup additional flour at a time until dough is no longer sticky and all pulled from sides of bowl

(I use half whole white wheat when I make this recipe- and it is delicious. I got this recipe from this blog)

Mini RS Class: Food Storage 101

In preparation for using the Stake's dry canner in Sept/Oct, Chelsie Moline is going to share some of her wondrous food storage knowledge with those of us who are just getting started with food storage and dont' know where to start!
The cannery is really backed up with orders so we'll be needing to place orders for number 10 cans and such in the next month or so in order to have them by Sept/Oct!!

My husband can't eat tuna so I got a 5-pack of canned chicken from Sam's Club. So there's an idea if your fam doesn't like tuna, either.

Extra batteries for the flashlights
Batteries get used up like food does so buy extra batteries and then rotate them like your food so you always have plenty on hand!

It's originally $17 but it's now $7 for each person with a minimum of 5 additional copies or $4 if we have at least 15 additional copies needed.

She's the same person that wrote "I can't believe it's Food Storage"- which is really great because she gives all the conversions for long-term food storage ingredients which we are trying to use more. There's a video on the link about what's in the e-cookbook and how to use it.
